To make the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Directions

For the Citrus Syrup: Put all the items into a pot, bring to a simmer, mixing so the sugar melts. Then, remove from the heat allowing it to cool completely. Decant into an sterilised bottle, seal keeping it in the fridge, where it will keep for about one month.

To make Batch Mix: Combine every liquids into a big jug, leave to sit for 60 minutes, then strain best through muslin, making it perfectly clear.

For serving: Measure 85ml of your batch mix into a cocktail shaker filled with ice, gently stirring gently for a minute until cold. Filter into a cold coupe glass or similar, garnish with some cranberries and complete it using a light spray of the essential oil over the drink.
